No-Bake Chocolate Peanut Butter Bites

Satisfy your sweet tooth in no time with this simple yet sinful-tasting snack. This quick and delicious recipe is easy to make, with no oven required. These little goodies are a welcome addition to almost any meal and are perfect for potlucks, kids’ lunches, or as an alternative to the traditional dessert.

For a dozen bites, you’ll need:

  • 3/4 cup organic quick rolled oats
  • 1 tablespoon chopped nuts (your choice)
  • 1/2 cup of dried bananas, roughly chopped
  • 1/4 cup of mini dark chocolate chips
  • 2 tablespoons ground flax seed or protein powder
  • 2 tablespoons unsweetened coconut flakes (optional)
  • 1/4 teaspoon salt (or 1/2 teaspoon if using unsalted peanut butter)
  • 3/4 cup peanut or almond butter
  • 1 tablespoon honey
  • 1/2 teaspoon pure vanilla extract

Mix all the ingredients together in a large bowl until blended, adding more honey or peanut butter if it’s too dry and more oats if it’s too wet. Once the dough sticks together well, use a spoon to portion out the dough, roll into bite-sized balls and place on parchment paper. Chill bites in the refrigerator until ready to serve.
