There's nothing like a sandwich melt to turn a boring day into something fabulous. Grilled cheese gets an adult makeover with the help of roasted red pepper and a garlic, spinach and balsamic vinaigrette. Using part-skim mozzarella cheese and whole wheat bread creates a healthy and light sandwich, perfect for a midday meal.
2 to 3 sections roasted red pepper; 4 slices mozzarella cheese; 2 slices whole wheat bread; 1 cup fresh spinach leaves; 1/4 teaspoon olive oil; 1/4 teaspoon salt; 1/4 teaspoon chopped garlic; 1/4 teaspoon lemon juice; 1/4 teaspoon balsamic vinegar; 1 tablespoon water; butter
- Slice the cheese, and separate the red pepper sections.
- To make the dressing, place the spinach, oil, salt, lemon juice, water and chopped garlic in a blender or small food processor. Pulse until it comes together into a chunky dressing.
- To assemble the sandwich, butter one side of a slice of bread and place, buttered side down, in a sauté pan over medium heat. Slather the bread with half the spinach dressing, place two slices of mozzarella cheese on the bread, and then add the sections of roasted red pepper.
- Top the red pepper with two more thin slices of mozzarella, then coat one side of the other slice of bread with the remaining spinach dressing. Lightly coat the other side with butter, and place, dressing side down, atop the sandwich. Toast for three to four minutes on each side or until the cheese has melted.
