Directions
Step 1
Bake the Potato Slices
1 pound Russet potatoes (about 3 small, sliced 1/4 inch thick), 2 tablespoons vegetable oil, salt and pepper
Preheat the oven to 450°F.
Toss the sliced potatoes in a large bowl with vegetable oil, salt, and pepper, ensuring all slices are evenly coated.
Arrange the potato slices in a single layer on a baking sheet.
Bake for 10-15 minutes, then use a spatula to flip the potatoes. Bake for another 10-15 minutes, or until they are golden brown and crispy.
Step 2
Melt the Cheese & Crisp the Bacon
4 ounces shredded jack cheese, 4 slices bacon (chopped)
Remove the baked potato slices from the oven. Sprinkle a small mound of shredded jack cheese on top of each slice.
Broil on high for 1-2 minutes, or until the cheese is melted and bubbly.
While the cheese melts, cook the chopped bacon in a large skillet over medium-high heat until the fat renders and the bacon is crisp.
Drain the cooked bacon on a paper towel-lined plate.
Step 3
Garnish and Serve
1/4 cup sour cream, 1 scallion (thinly sliced), hot sauce
Remove the cheesy potato slices from the oven and transfer them to a serving platter.
Top each potato slice with crispy bacon, a small dollop of sour cream, thinly sliced scallions, and a few dashes of hot sauce for added heat and flavor.
